HOW MANY SUPPLIES TO TAKE ON BOARD?
In order to calculate as closely as possible the amount of provisions to put in the galley for a cruise, it is necessary to make mathematical calculations that start with some precise questions: How many people are on board? For how many days of sailing? For how many meals on average each day? How often will it be possible to go ashore to refill shipboard provisions?
HOW TO CALCULATE THE QUANTITY?
Now you just need to start doing the math, keeping in mind, in order to have a little scientific basis from which to start, what are considered to be the average consumption of each person in a day and that includes: for breakfast, 10 grams of coffee (one cup), 25 grams of milk, 25 grams of butter and 50 grams of jam for two slices of bread (equal to 50 grams), 25 grams of sugar and 100 grams of cookies; for lunch, 100 grams of pasta, 80 grams of rice, 100 grams of meat, 200 grams of fish, 1 egg, 100 grams of legumes or vegetables, 30 grams of condiments, 20 grams of Parmesan cheese, 100 grams of bread or substitutes, 100 grams of cheese, 150 grams of fruit, half a liter of water, half a liter of beer, a quarter liter of wine, grams of coffee (one cup), 25 grams of sugar, 20 grams of salt; for dinner, 100 grams of pasta, 80 grams of rice, 100 grams of meat, 200 grams of fish, 1 egg, 100 grams of legumes or vegetables, 30 grams of condiments, 20 grams of Parmesan cheese, 100 grams of bread or substitutes, 100 grams of cheese, 150 grams of fruit, half a liter of water, half a liter of beer, a quarter liter of wine, grams of coffee (one cup), 25 grams of sugar, 20 grams of salt; for snacks and related items, 100 grams of chocolate, 100 grams of dried fruit, 200 grams of cookies, 200 grams of bread, 100 grams of cold cuts, 100 grams of cheese, half a liter of beer, half a liter of water, half a liter of carbonated soft drink, 1.5 deciliters of spirits, 150 grams of desserts of various kinds.
Obviously with regard to each meal some things are in alternative to others to make an exact calculationor, for example: that is, for breakfast bread and jam or cookies (for calculation choose what you prefer); for lunch pasta or rice (in the case of multiple sailing days assume some days of pasta and others of rice). In addition then it is always best to calculate to carry a couple of pounds of flour with you, divided into several 500-gram bags and a few packages of breadcrumbs.
Instead, here is a pre-calculated example of provisions needed to form the basic galley for a one-week cruise for six adults: 3 kilograms of short pasta (fusilli, macaroni and conchiglie), 1 kilogram of long pasta (spaghetti and bucatini), 1 kilogram of rice, 4 boxes of 250-gram tuna, 2 boxes of 250-gram salmon, 1 box of 250-gram shrimp, 1 box of 200-gram mussels, 1 box of 150-gram clams, two 100-gram jars of anchovies, 3 cans of 400-gram cannellini or borlotti beans, 3 cans of 300-gram chickpeas, 4 cans of 500-gram peeled tomatoes, 1 can of 500-gram peas, 2 jars of eggplant and peppers in oil, 5 kilos of tomatoes (San Marzano or cherry), 2 packages of lettuce (Belgian or lettuce), 12 carrots, 1 celery, 1 kilogram of zucchini, 2 white or red onions, 2 heads of garlic, 3 boxes of fruit in syrup (pears, pineapple, peaches), 14 apples or pears, 2 avocados, 5 lemons, 1 kilogram of crackers or breadsticks, 2 packages of grated Parmesan cheese, 3 packages of 200-gram feta cheese, 1 package of 300-gram emmental, 12 eggs, 2 liters of extra-virgin olive oil, 300 milliliters of vinegar, 1 250-gram package of butter, 200 grams of salted capers, 1 kilo of fine salt, 200 grams of olives, 500 grams of sugar, 500 grams of coffee, 2 liters of milk, 56 1.5-liter bottles of water (sparkling or still). Plus wine and beer to taste.
Meat, fish, and sausages are not included in this example calculation because they are too perishable and because the choices related to their consumption are too tied to the frequency of stops (with associated going ashore for groceries) on each different cruise.
